This boning knife is made with the same 386 layer Damascus steel mixture and heat treatment as our fillet knives. This knife is less flexible than the fillet knives, but equally sharp and tough. The handle is stabilized, figured black locust sourced from a sawmill in Swannanoa, NC. The handle is designed to be held in multiple hand positions for butchering, and is attached to the blade with three custom brass rivet-bolts (machined in house) and West Systems G-flex epoxy. The blade length is 6" with overall length of 10.5". The blade edge has a hardness of approximately 59 HRC and the rest of the blade is differentially tempered for toughness. The steel in this knife is designed to take a fine edge easily and be very tough. The blade bevels are flat ground on both sides, with a slightly convex micro-bevel on the edge.
An optional handsewn, custom formed sheath is available for this knife also.
